Ensaladas de Espinaca y Croutones

Dificultad y tiempo: Fácil. Entre 15 y 20 minutos. Raciones: Para 6 personas.

Ingredientes para Ensaladas de Espinaca y Croutones

4 rebanadas de pan sin corteza
2 atados de espinacas
100 g de panceta ahumada cortada en daditos
200 g de champiñones
100 g de queso roquefort
1 cucharada de vino blanco
2 cucharadas de vinagre
4 cucharadas de aceite de oliva
2 dientes de ajo
Sal y pimienta a gusto

Cómo preparar Ensaladas de Espinaca y Croutones

Untar con ajo el pan y cortarlo en cubos. En una sartén, dorar con una cucharada de aceite.

Rehogar en su propia grasa la panceta hasta que esté crocante, desglase con el vinagre mezclado con vino.

Luego hierva y retire la panceta y mezcle el aceite con el liquido remanente de la panceta para el aderezo.

Acomode en la ensaladera o bol, las cortadas a mano hojas de espinaca, el queso, los champiñones,

el queso roquefort cortado en cubos, La panceta y los croutones. Adherir con el aderezo.
